Vegetable Stew
Just two steps!! It is the simplest stew you can make and it goes with everything.
1 Red onion (thinly sliced)
1 Tomato (sliced into wedges)
1 cup Carrot (cut into 1x1 blocks)
3 Green chilies (slit)
Salt to taste
¾ cup Coconut milk
Curry leaves (optional)

Boil all the vegetables in salted water for 15 minutes (three whistles if you are using the pressure cooker.)

Add coconut milk and curry leaves.

Serve on rice/quinoa or with appams/dosas.

Float to the nearest cloud and enjoy nirvana.
