There is nothing like making burgers from the scratch! Light, airy brioche buns, homemade veggie patties, and a spicy garlic Aioli.

For the brioche bun
3tbspWarm milk
2tbspSugar
2tbspDry active yeast (or 1 packet)
2Eggs
3cupsBread flour
½cupAll-purpose flour
1 ½tspSalt
2 ½tbspButter (softened)
For the veggie patty
1Carrot (grated)
1Potato (grated)
½Onion (minced)
2 ¾cupsCorn kernels
¼cupPeas
1tspGarlic (minced)
1tspGinger (minced)
1Jalapeno (minced)
¼cupCilantro
6tbspAll-purpose flour
1tspCumin powder
1Egg
3tbspOil
For the spicy garlic aioli
1cupMayonnaise
2tbspSriracha sauce (or any other hot sauce)
1Lime (juiced)
For the brioche buns

In a cup of warm water, mix sugar and yeast into the warm milk and set aside for 10-15 minutes.

Sift the flour and salt. Add butter and rub it into the flour to make crumbs. Add the yeast mixture and eggs.

Scrape the dough onto a clean, lightly floured flat surface and start kneading until it is smooth and elastic.

Cover the dough with a plastic wrap or a damp cloth and let it rest for an hour or two.

Divide the dough into 8 parts and place them 3 cms apart on a baking tray. Cover it again and let it rest for another hour or two.

Pre-heat the oven to 400F. Fill water in a baking pan and place in on the floor of the oven. Brush the buns with some milk and bake it for 15-20 minutes or until they are golden brown.
For the veggie pattie

Combine all the ingredients except the egg and oil. Mix well.

Crack the egg in it and bring it all together. Divide this into 8 patties (3 tbsp each) and flatten them. If you feel like it is too wet or breaking apart a bit, coat it with some flour.

Freeze the patties for half hour so that they set and it is easier to fry them.

Heat the oil and shallow fry the patties. Pat dry with a tissue to remove the excess oil.
For the spicy garlic aioli
