Onion Pakodas

Yields10 Servings
 ¾ cup Besan/Chickpea flour
 ½ Onion (thinly sliced)
 ½ tsp Turmeric powder
 ½ tsp Chili powder
 ½ tsp Salt
 ½ tsp Cumin powder
 Baking soda (a pinch)
 2 cups Vegetable oil (to fry)
 1 Chilli (cut into small pieces)

Add all the ingredients apart from the oil. Add water (tablespoon by tablespoon) until the ingredients are just combined.

Heat the oil in a small saucepan. Test if the oil is hot by dropping a small bit of dough in the oil. If it bubbles and rises to the top, the oil is ready.

Pull out a small piece of the pakoda batter and carefully drop it into the oil. Fry until golden brown and drain on paper tissues.

Serve hot with a chutney or ketchup.
