Honeycombs
Little pieces of golden sugar candy that crumble like golden dust.
1 ⅓ cups Granulated sugar
½ cup Honey
Cream of tartar (a pinch)
1 ½ tsp Baking soda

Line a baking tray with a silicone sheet and set aside.

Mix the sugar and syrup in a saucepan before bringing it to heat.

Once it comes to a boil and turns into this luscious golden colour, take it off heat and add the pinch of cream of tartar and baking soda.

It will bubble and froth. Pour this into the prepared pan and leave it to rest. Once it hardens, you can smash it into small shards!
